Sushi Taka is a sister brand of Sushi Saito, a Tokyo-based restaurant with 3 Michelin Stars since 2009, owned by legendary Chef Takashi Saito. Chef Saito is determined to open the door of its high-end sushi brand so that the public can also taste the studiously crafted sushi with the Shokunin’s outstanding technique.
Each production process is supervised by Chef Saito, including the selection of a variety of sushi rice. After mixing the sushi rice, a diversity of vinegars is added for seasoning. Each sushi has to be maintained at a certain temperature level. It is certainly not the level of standard general sushi restaurants can deliver.
